‘Hands-on Class with Wayne Caddy’

This 3-day course will be held at the Pastry Academy UK situated in Cheltenham, England, and will be hosted by ‘Sourdough Slingers’ Wayne Caddy.

Over the 3 day masterclass, Wayne will cover sourdough and long fermentation systems. As well as a baking philosophy and approach to the key foundations for a simple and fluid way to bake. Not only will a variety of sourdough be produced but also sweet doughs, farmers loaf using UK grains and artistic baguettes.

This class will run between 9am & 5pm (approximately) on all days, but please allow for a slight overrun.

Please bring a notepad & pen for your own notes, although a booklet with the recipes & methods will be provided on the day. A break will also be provided for lunch whether you choose to bring some with you, or enjoy one of the many eateries we are lucky enough to be surrounded by. Please bare in mind when planning that refreshments and lunch will not be provided, but you are welcome to bring them along with you.

This class will be predominantly hands-on so you will really be able to get to grips with methods and techniques used. All of our classes are very personal and are limited in number to ensure that all participants get the most out of the experience.

This class is ideal for bakery chefs, enthusiastic individuals, and those wanting to understand the full concepts of what Wayne has to offer. This class is open to any level, providing you have a basic understanding of the bread making process.
